Every time I am at the grocery store, I chuckle to myself, because I see soooo many people purchasing brown eggs. They pay twice as much for these so-called "super-healthy, super-vitamin enriched" brown eggs!
Do you know what happened in the 1980's with the egg market? Well, there were all these brown eggs that people were not purchasing, and the egg producers did not know what to do with them to get people to purchase them instead of the white eggs. We were so accustomed to purchasing white eggs that there was a subconscious thought that brown eggs were dirty...or something. People just would not purchase brown eggs...so they were less expensive than white eggs. Did you know that? Well, then the egg marketing board had a brainwave that they would change their approach to how they marketed eggs to enhance (brainwash) people into thinking brown eggs were that colour because they had more vitamins and nutrients in them. So, for a while, when we first lived in the city, we always purchased brown eggs, because they were the least expensive. We knew they were just the same as white eggs, but nobody else did. HaH! Then when the Department of Agriculture and the Egg Board put their cunning little plan in place, it only took a few years, and people were purchasing brown eggs thinking they were going to be more healthy when they ate these brown eggs.
Now, this is coming from a farm gal who was born and raised on a ranch in Southern Alberta. We raised our own chickens, geese, turkeys, hogs, and cattle. It was one of my regular chores to gather the eggs from the chicken coup.
It became common knowledge that the brown hens laid brown eggs and the white hens laid white eggs. We actually saw the hens laying eggs, so we had proof! Both the brown hens and the white hens were fed the same feed and water. They were organically fed, because there were no preservatives or additives then. The eggs tasted exactly the same.
Do you want to know what makes the yolks brighter orange? It is not the super-charged feed they are fed. Chickens that are allowed to "free range" are outside and they get grass and other food besides their regular grains and water. When chickens are allowed to range freely and ingest other plants and grasses, it makes the yolks bright orangish in colour, and gives them a stronger flavour. The chickens also get exercise and sunshine. These conditions all contribute to the brighter yolks.
So! Here's the scoop, if you like stronger tasting yolks, buy free-range eggs...and they can be either brown or white. -But if you ask me, buy the white ones; save yourself the extra couple dollars. Why pay a premium for the colour?
